The art of harvesting pumpkin seeds.
On the clayey banks of the Stella river, the farm owned by De Giusti Stefania grows a particular quality of pumpkins. Hence Anaxum, which thanks to the extraordinary nutritional properties of pumpkin seeds, obtains several 100% natural products: a must-try on our tasting itineraries.
Anaxum is a toponym of Celtic origin, used by the ancient inhabitants of the Friulian plains to identify one of the waterways crossing the land: the Stella river. On the shores of said river, near the small village of Torsa you will find the fields of Anaxum. Here, Stefania De Giusti, owner of the company and creator of the project, sowed her pumpkin seeds. Awareness of the nutritional and healing properties of pumpkin seeds has deep roots, dating back to the native populations of Central and South America. The Indians were aware of the high nutritional value of these seeds, to the point that in a short time pumpkin seeds had become a fundamental part of their diet. The ancient shamans, the medicine men of the time, praised the innumerable properties of this product of the land, and considered it a food capable of generating a perfect balance between body, mind and spirit.
Thanks to an alternative method, unique in Italy, Stefania grows a particular quality of pumpkin, different from the common pumpkins we find in our fruit and vegetables shops. During the harvesting process, in fact, the pulp and peel of such pumpkins are discarded and remain on the ground as fertilizers, on the contrary to what commonly happens with the pumpkins we eat. Instead, the seeds are collected as they have absolutely extraordinary nutritional properties.
Pumpkin seeds, holding amazing nutritional properties, are used as food just as they are or covered with cocoa, chocolate or caramel to create healthy and balanced snacks. The seeds can otherwise be processed to produce oil and flour, from which sweet and savory foods with a unique taste are obtained. Pumpkin seeds are also used in the cosmetics sector to create 100% natural beauty products.
